Callipari is a Boutique Winery and was established in 1997 by the Callipari Family. We specialize in making our wines by traditional methods. Grapes are harvested by hand. Gently crushed and open fermentation is then carried out.To date, pressing is done with the traditional basket press. The wines are then left on lees for a few months and racked into French and American Hogsheads. American Barriques are also used with Shiraz and Cabernet Sauvignon. Racking takes place once or twice in a year depending on the state of the wine. Prior to bottling, the wines are filtered to retain as much of the natural complexities of the wine as possible. At Callipari we try to impart the terroir into our wines and gently nurture our finished product from what nature has provided us with. Our wines are made by traditional methods from carefully selected parcels of grapes from the family vineyards. A ready to drink now wine, with very good cellaring potential Preservative 220 added 14.5% Alc./Vol Produce of Australia. Rich, colourful and full of fruit with spicy and toasty characteristics. The first straight Shiraz to be released from the Callipari Karkarooc Vineyard. Traditional winemaking was followed by ageing for 12 months in American oak.
